Jody Maroni’s: This pioneering sausage inventor sells 27 kinds of sausage, in sandwiches and by the pound. Top sellers include a sweet chicken Italian sausage, the Yucatan (chicken, duck,
cilantro, garlic and beer) and the low-fat Louisiana sausage, a boudin-style link made of rice cooked in duck stock with a good hot kick. (Sausage, $5 a pound; sausage sandwiches, $3.75
each.) 2011 Ocean Front Walk, Venice, (310) 306-1995; Universal CityWalk, 1000 Universal Center Drive, Universal City, (818) 622-5639.
* Alpine Village: A Small World unto itself, Alpine Village includes a market that makes and sells some 20 international sausages. There are knockwurst, bratwurst, weisswurst, English
bangers and blood sausage, as well as Hungarian and Italian sausages and cevapcici, a small Croatian-type sausage made from beef, lamb and pork. You can also sample some of these at the
restaurant next door. (Sausages, $3.98 to $4.18 a pound.) 833 W. Torrance Blvd., Torrance, (310) 327-2483.
* Atlas Sausage Kitchen: For 65 years, Atlas has been supplying the Southland with Polish, Czechoslovakian, Hungarian and, most of all, German sausages. Eight to 10 kinds of bratwurst are
available daily. Sausages are made on the premises, contain no fillers and are as low-sodium and low-fat as possible. The chicken bratwurst, in fact, is 95% lean. Some sausages are
nitrate-free. (Sausage, $3.98-$4.98 a pound.) 10626 Burbank Blvd., Burbank, (818) 763-2692.
* Schreiner’s Fine Sausages: Bratwurst, applesauce and link sausages are sold fresh Thursday through Saturday. The rest of the week, you can find them in the freezer along with eight other
varieties, including precooked, lightly smoked frankfurters and knockwurst, precooked and smoked Polish, Hungarian, extra-hot Polish and jalapen~o sausages. Sandwiches available. (Sausage
and sandwich prices vary.) 3417 Ocean View Blvd., Glendale, (818) 244-4735.
* European Sausage Kitchen: Any serious sausage-fancier should have in the freezer, at all times, a supply of this vendor’s bockwurst. Also available are fresh chicken, pork, lamb, beef and
blood sausages, not to mention the Boerwurst, an all-beef sausage from South Africa. (Sausage, $3.59-$10 per pound.) 9109 Olympic Blvd., Beverly Hills, (310) 276-1331.
* Krakus: This modest deli, import shop and cafe (the Valley’s only Polish restaurant) provides a small education in Eastern European charcuterie. Try the many varieties of homemade
sausages, including czosnekowa (garlic sausage), kiszka (a blood sausage), biala kielbasa (mildly spicy pork sausage) and Jupiter sausage (a spicy Polish variety). (Sausage, $3.19-$4.99 a
pound.) 16226 Parthenia St., North Hills, (818) 893-9122.
